The convertible ones are bigger, so they can be used for babies as well as for older children. The reason they're called convertible car seats is because they can be rear-facing or front-facing. Look for child safety seats with multiple harness strap slots and adjustable shields so that the seat can grow with your baby. It's also good to have built-in angle adjusters to help you get the proper recline, and seats with good head support systems.When your child reaches the maximum height or weight for the seat, or when your child's shoulders are above the harness slots, or when your child's ears have reached the top of the seat, they are ready to "graduate" to a booster seat. The purpose of a booster seat is to 

lift your child high enough so that your car's seat belt fits properly. (A proper seat belt fit for a child for maximum child safety means that the lap belt lies low across the child's thighs and the shoulder belt crosses the middle of the child's chest and shoulder.)

Of course, proper installation is key for this or any other child safety product. Follow the manufacturers instructions for installing the car seat, and make sure it's very secure before putting your child in it. If you have any doubts, go to the police station and ask. Any policeman will be glad to help you make sure of this. Once the car seat is securely strapped in your vehicle, make sure your child is securely strapped in to the seat.
